Perfectly delicious, these coffee almond friands are almost too good to be a one bowl wonder!


Serves:
 12 friands
Preparation Time: 5 minutes
Cooking Time: 20 minutes

Ingredients

  • 6 egg whites
  • 175g unsalted butter, melted and cooled
  • 1 ½ cups icing sugar mixture, sifted, plus 1 teaspoon extra
  • ½ cup plain (all-purpose) flour, sifted
  • 1 cup almond meal
  • 1 ½ tablespoons strong instant coffee
  • 1 teaspoon cinnamon sugar


Instructions

  1. Preheat the oven to 190C and lightly grease a 12 capacity friend tin.

  2. Lightly whisk the egg whites until they’re lovely and frothy. Add the butter, icing sugar mixture, flour and almond meal and lightly whisk until they have just come together. Add the coffee and lightly stir with the whisk to incorporate.

  3. Divide the mixture into the 12 friand spots and pop the tray in the oven to bake for 18-20 minutes or until golden brown and cooked through.

  4. Immediately turn out onto a wire rack to cool. The friands are a little stubborn in getting out of the tin so feel free to use a toothpick to run around the edges of each friand and gently lift them out of the tin. Allow to cool on a wire rack.

  5. To serve, sift over the extra icing sugar mixture and cinnamon sugar.

Everyone needs a handful of good recipes in their arsenal to cover every situation – from having last minute guests over for drinks, dinner, or even unexpected visitors for brunch or a cuppa. These coffee almond friands are one such recipe for me!

I’ve served them as part of a breakfast spread at my workshops in addition to those less-than-half-an-hour-notice visitors that I simply adore, not to mention for a simple afternoon tea for my cherubs when they come home from school.

The batter is so easy to whip up and is made in a single bowl…oh and if you’re wondering, they are delicious! The coffee and almond flavour combination is simply beautiful and worthy of justifying a second friand with your cuppa.
